Sicilian Apple Cake
So easy to make, this cake impresses every time!

Full of healthy ingredients and perfect for afternoon tea or dessert, this Sicilian Apple Cake is a “must have” in any collection!

Sicilian Apple Cake Recipe

Ingredients

4 ¼ oz (120 g) butter, melted

2 ¼ oz (60 g) toasted walnuts, ground

2 lb 4 oz (1 kg) granny smith apples

4 ¼ oz (120 g) raisins

3 ½ oz (100 g) pine nuts, toasted

9 oz (260 g) sugar

3 large eggs

2 teaspoons vanilla extract

Applezest and juice of 1 lemon

5 ½ oz (150 g) self-raising flour

3 fl oz (90 ml) milk

3 tablespoons sugar

1 teaspoon ground cinnamon

 

Preheat the oven to 350°F (180°C). Butter an 8-inch (20 cm) cake tin generously, then sprinkle with the ground walnuts.

Peel and core and quarter the apples, then cut into slices. Toss the apples with the zest and juice of the lemon and set aside.

Whisk the eggs, vanilla and sugar together until pale and creamy. Add the melted butter, flour and milk. Mix thoroughly.

Pour one-third of the batter into the prepared cake tin, then top with one-third of apple, raisins and pine nuts. Repeat with another third of batter and apples then with the remaining batter and finish with layer of apples. Sprinkle the combined sugar and cinnamon over the top.

Bake for 55 minutes, or until deep golden and firm. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely. Serve warm or cool with cream or ice cream.
