It may look like a tomato, but along with mango, tamarillo provides the perfect complement to this healthy porridge recipe.
Rice Flake Porridge with Tamarillo and Mango Recipe
Serves 4
Ingredients:
1 tbsp ghee
2 cups rice flakes
2 tbsp LSA (linseed, soy and almond meal)
1 tsp vanilla extract
2 cups organic milk
1 mango, chopped
2 tamarillos, peeled, chopped
2 tbsp organic maple syrup
Method:
Heat ghee in a saucepan over a medium heat. Add rice flakes and cook until golden (toasting the flakes gives the dish flavour and makes the rice more easily digestible).
Add LSA, vanilla, milk and 2 cups of water. Cook, stirring constantly, until the porridge boils and thickens. Reduce heat to low and simmer for 10 minutes or until soft.
Serve rice flake porridge topped with mango, tamarillo and maple syrup.
