Lamb Sausage Rolls with Caramelised Onion Relish Recipe
You can’t go past a sausage rolls when it comes to entertaining. And with this recipe, you’ll be dishing up the best version your guests have ever tasted.
Makes 35
Method:
500g lamb mince
250g pork mince
1 lemon, zest only
2 cloves garlic, crushed
¼ cup pinenuts
2 tsp cumin seeds, toasted
2 tbsp chopped herbs such as mint, sage, rosemary, chives
½ jar F Whitlock & Sons Caramelised Onion Relish
500g puff pastry sheets
1 egg, beaten with 1 tbsp milk
1 tbsp poppy seeds
Method:
Combine lamb and pork mince, lemon zest, garlic, pine nuts, cumin, herbs and onion relish in a bowl. Season. Mix well using wet hands. Leave to chill in fridge for 1 hour.
Preheat oven to 180˚C. Lay pastry flat on a floured board. Cut into strips about 8cm wide. Spoon meat and onion mixture along the length of the pastry strip. Form into a long sausage shape. Brush surrounding pastry with egg wash. Roll pastry over filling. Press the flap onto the base of pastry and rest the roll, flap side down. Cut roll into 5cm pieces, brush each piece with egg wash and sprinkle with poppy seeds. Repeat with all the pastry and meat.
Place the rolls on a baking tray. Bake in oven for 25-30 minutes until golden brown. Serve with extra Whitlocks Caramelised Onion Relish.
