Karedok is an Indonesian salad, made from raw vegetables and peanuts. This can be served as a main meal, or as a tasty side dish.
Serves 6
2 lebanese cucumbers, finely diced
1 bunch snake beans, trimmed and finely sliced
60g cabbage, finely shredded
250g bean sprouts, trimmed
115g pkt baby corn, finely sliced into rounds
1 bunch lemon basil, leaves picked
3 tbsp vegetable oil
60g raw peanuts
2 cloves garlic,peeled
2 small green chillies
2 small red chillies
1cm piece fresh ginger, peeled
1/2 tsp salt
1/4 tsp tamarind puree
1/4 cup water
1 Combine the cucumbers, snake beans, cabbage, bean sprouts, baby corn and lemon basil in a large bowl, cover with plastic wrap and refrigerate until required.
2 Meanwhile heat the oil in a wok over a moderate heat until hot, fry the peanuts for 1 minute or until golden brown, drain the peanuts on paper towel.
3 Using a pestle and mortar pound the garlic, green and red chillies, ginger and salt to a paste. Add the fried peanuts and crush the peanuts into the spices until the peanuts are coarsely ground. Mix the tamarind puree and water together and add to the peanut spice mixture. Toss the spiced peanut mixture through the salad just before serving.
