As the weather starts to get cooler, warm up with tasty comfort foods like these delicious lamb chops, grilled with crumbled feta cheese.
Serves 4
3 tbsp olive oil
12 lamb chops
150g feta, crumbled
2 garlic cloves, crushed
2 tbsp thyme leaves
1 tsp honey
sea salt
Tomato Salad
4 vine-ripened tomatoes, cut
into wedges
1 white onion, peeled and sliced
1 tbsp oregano leaves
2 tbsp red-wine vinegar
2 tbsp olive oil

1. Preheat oven grill to high. Heat 1 tablespoon of oil in a large nonstick frying pan and cook lamb for 1 minute on each side to seal. Place on a large baking tray and top with feta.
2. In a small bowl, whisk together remaining oil, garlic, thyme, and honey and pour over lamb. Season with sea salt and freshly ground black pepper and grill for 8-10 minutes or until golden.
3. To make tomato salad, place tomatoes, onion, oregano, vinegar, and olive oil in a bowl; season with sea salt and freshly ground black pepper; and toss gently to combine. Serve grilled lamb chops with tomato salad.
