Ham with Sticky Honey Sichuan Glaze

Hot or cold, ham on the bone is a star attraction at any feast and will feed a hoard of hungry family and friends. This Ham with Sticky Honey Sichuan Glaze will give your next ham a festive flavour. 

Makes approx. 450ml

1 cup thick honey

½ cup dark brown sugar

½ cup rice wine

3 tbsp Sichuan peppercorns, crushed in a mortar

3 star-anise

2-3 tsp chilli flakes

2-3 whole dried chillies (optional)

2 tbsp soy sauce

2 tbsp grated ginger

Glazed peaches, to serve (Tip below)

Mint sprigs, to garnish

 

In a medium bowl, stir honey, sugar, rice wine, crushed Sichuan peppercorns, star-anise, chilli flakes, whole dried chillies (if using), soy and grated ginger until sugar dissolves.

Brush 1 3 of the glaze over ham. Roast for 20-30 minutes, then use remaining glaze to repeat brushing and cooking twice more until ham is cooked and glaze is golden brown and sticky. Timing will depend on the type of glaze you choose and the size of ham, so use this as a rough guide.

Serve with glazed peaches, garnished with mint.

 

Tip:

We used our Sticky Honey Sichuan Glaze to coat freshly cut peaches, then grilled them. Yum!
