Gluten-Free Chocolate Cookies with White Chocolate & Pecans
Makes about 18 cookies
200g butter
120g coconut sugar
2 eggs
2 pinches of salt
200g almond flour
40g cacao powder
60g gluten-free rolled oats
35g shredded coconut
1 tsp bicarbonate soda
1 tsp vanilla powder or vanilla sugar
150g pecans, roughly chopped
100g white chocolate, roughly chopped
Pre-heat the oven to 220°C (200°C fan- forced). Using a microwave or stovetop, melt the butter and then allow to cool.
Place the coconut sugar and eggs in a small bowl, mix until combined.
In another bowl, combine the salt, almond flour, cacao, oats, shredded coconut, bicarbonate soda and vanilla.
Pour the egg mixture into the dry ingredients and add the melted butter. Mix until just combined, then let the dough rise for 5 minutes.
Roll the dough into small round balls and place on a lined baking tray, leaving enough room for the cookies to spread. Press pieces of pecan nuts and white chocolate into the cookies.
Bake in the middle of the oven for 7-8 minutes or until cooked. Allow to cool on a wire rack before serving or placing in boxes to give as gifts.
