Balsamic Roasted Figs & Coconut Wafers

Ingredients
1 egg white
¼ cup caster sugar
20g butter, melted and cooled
1 tbsp honey
¼ cup plain flour
¼ cup shredded coconut
8 large fresh figs
½ cup balsamic glaze or balsamic vinegar
Method
1 Preheat oven to 160C. Line a large baking tray with baking paper. Whisk egg white and sugar together for 1 minute or until frothy. Add butter and honey. Stir until well combined. Add flour and stir until mixture is smooth. Thinly spread mixture over baking paper with a large spatula. Sprinkle coconut over mixture. Bake for 10 minutes or until mixture is golden and crisp. Cool on tray. Break into shafts.
2 Increase oven temperature to 180C. Cut figs into quarters without cutting through to the base. Put figs on a baking tray. Drizzle with balsamic glaze and bake for 10-15 minutes or until edges of figs are singed and sticky with balsamic glaze. Serve with coconut wafers.
