8 figs
½ cup coconut sugar
½ tsp ground cinnamon
1 star anise
¼ cup coconut milk
¼ cup thickened cream
Flaked coconut, toasted,
to garnish
Ice cream, optional
Preheat large disposable foil barbecue tray on barbecue plate. Slice figs in half lengthways. Mix sugar and cinnamon on a plate. Press cut side of fig firmly into sugar mixture to coat well. Transfer figs, cut side down, to a large disposable foil barbecue tray.
Place tray on preheated barbecue plate over a medium heat. Cook for 2 to 3 minutes, or until figs are golden and caramelised.
Transfer figs to serving plates. Cover to keep warm. To make Coconut & Star Anise Caramel, add remaining sugar to foil tray, with star anise and coconut milk. Cook, stirring for 3 to 5 minutes or until golden. Stir in cream and heat through.
Spoon Coconut & Star Anise Caramel over figs. Serve with ice cream. Garnish with flaked coconut.
