Chocolate Marshmallow Christmas Trees

Chocolate Marshmallow Christmas Trees. These Chocolate Marshmallow Christmas Trees are sure to be a hit at your next Christmas party. 

Makes 24 biscuits

 

1 quantity Marshmallow Master Recipe

1 1/2 tbsp vegetable oil

200g dark chocolate, melted

Decorations (such as cachous, stars, hundred and thousands or icing sugar)

 

Biscuit Base

125g butter, softened to room temperature, plus extra, to grease

1/2 cup brown sugar

2 tsp vanilla essence

1 egg

1 1/4 cups plain flour, plus extra, to dust

1/4 cup cocoa powder

1 tsp baking powder

 

To make biscuit base, preheat oven to 160°C fan-forced. Grease 2 large baking trays with extra butter. Line with baking paper. Place butter, sugar and vanilla in a medium bowl and beat with an electric hand mixer on medium-high for 2-3 minutes or until light and creamy. Beat in egg until well combined. Sift in flour, cocoa and baking powder. Beat on low until just mixed. With hands, lightly knead and bring dough together. Wrap in plastic wrap and chill for 20-30 minutes.

On a lightly floured benchtop, roll out dough until 5-6mm thick. Using a 5cm fluted round cutter, cut out 24 shapes, re-rolling any scraps. Arrange shapes on trays, allowing a little space between each for spreading. Bake for 10-12 minutes or until lightly golden. Cool on trays for 5 minutes then transfer to wire racks to cool completely.

Make a batch of Marshmallow Master Recipe. Working quickly, spoon marshmallow mixture into a large piping bag with a 1.5cm plain nozzle. Pipe onto biscuits to resemble Christmas trees (as pictured). Set aside for 30 minutes or until set.

Stir oil into melted chocolate and set aside to cool slightly. Dip marshmallow trees into melted chocolate, sprinkle with decorations and set aside to set. Serve.

 

Tips

To save time, pipe marshmallow onto your favourite store-bought biscuits.
