Donuts:
¾ cup milk (split into ¼ cup and ½ cup)
2 ¼ tsp dry active yeast
1/3 cup sugar
15g butter, softened
1 egg
2 ½ cups plain flour
½ tsp salt
2 teaspoons pure vanilla extract
1/2 cup frozen OOB blueberries
Glaze:
1 1/2 cups sugar
1/4 cup milk
Preheat oven to 190 degrees Celsius. Pour ¼ cup milk into bowl of mixer. Sprinkle with yeast and stand for five minutes.
In a small bowl, combine ½ cup milk with sugar and butter. Add to yeast and stir to combine. Add egg and vanilla extract. Stir again. Add flour and salt. Stir until dough begins to form
Knead until dough starts to become smooth. If it’s a little wet, add additional flour.
Gradually and gently knead in frozen OOB blueberries. Place dough in a large, lightly greased bowl, cover and leave until doubled in size (approx. 40mins). Roll out gently and use a large circular cookie cutter to press out doughnut shapes. Then use a smaller circular cutter to press out the small centre of each doughnut. Cover and leave to expand again. Bake in the oven for 7 minutes or until lightly golden
Cool on tray for 5 minutes then transfer to cooling rack. While cooling, mix sugar, milk, and vanilla extract together to form the glaze. Drizzle with glaze and enjoy!
