Berry Sorbet with Mixed Spices. Make the perfect sorbet in minutes with Vitamix – without a freezer!

Makes 1.2 L

Total Time: 25 Minutes

180 ml (3/4 cup) cold water
15 g (1/2 ounce) fresh ginger, peeled
100 g (1/2 cup) granulated sugar
150 g (1 cup) frozen unsweetened strawberries
140 g (1 cup) frozen unsweetened blueberries
140 g (1 cup) frozen unsweetened blackberries
140 g (1 cup) frozen unsweetened raspberries
300 g (2 cups) frozen pitted bing cherries
15 g (1/2 cup) fresh mint leaves
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
480 ml (2 cups) ice cubes

Directions

Partially thaw frozen berries for 10 to 15 minutes; set aside.

Place water, ginger and sugar into the Vitamix container and secure lid.

Select Variable 1.

Switch machine to Start and slowly increase speed to Variable 8. Blend for 10 seconds until ginger is finely chopped. Stop machine and remove lid.

Add berries, mint, cloves, allspice, nutmeg, cinnamon, vanilla and ice cubes to the container with the ginger mixture and secure lid.

Select Variable 1.

Slowly increase speed to Variable 10, then to High, using the tamper to press the ingredients into the blades.

In about 45 to 55 seconds the sound of the motor will change and four mounds should form.

Stop machine. Do not over mix or melting will occur.

Serve immediately.

Note: This recipe has been written for the C-Series and G-Series Vitamix machines with Variable Speed control and 2.0-litre container. If you are using a different machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
