Bakwan fritters are an authentic Indonesian dish that simultaneously taste sweet and savoury. They make an excellent appetiser if you’re entertaining or work as a light meal when served with rice.

Serves 4

400g pkt traditional stir-fry (in the pre-packaged vegetable section near the salad leaves)

2 single clove garlic, peeled and crushed

1 cup plain flour

3/4 cup water

salt and pepper

oil for deep frying

1/2 cup natural yoghurt

steamed rice to serve

1 Place the traditional stir-fry into a large mixing bowl. Trim the broccoli into smaller pieces. Add the flour, 1 clove of crushed garlic, water and season with salt and pepper. Mix to combine.

2 Heat enough oil to fill a wok 1/3 full over a moderately high heat. Drop heaped tbsp of the fritter mixture into the oil and deep fry for about 5 mins, turning frequently until the fritter is golden and crisp. Drain on a platter lined with paper towel. Continue cooking the remaining batter.

3 Stir the remaining crushed clove of garlic through the yoghurt and serve with the warm fritters and steamed rice.
