4 Ways With Kiwifruit

​Make the most of kiwifruit season with these 4 Ways with kiwifruit, from refreshing cocktails to crunchy fruit crisps, these creations will tempt your tastebuds any time of the year.

Kiwifruit & Ginger Marmalade

Peel and slice 1kg of kiwifruit. Pare the rind from 3 limes and cut into thin strips; repeat for 1 orange. Measure ¼ cup of lime juice. Grate a 5cm piece of ginger, collect in a cloth to squeeze out ginger juice. Put all ingredients plus juice of 2 lemons, 1 cup water and 3 cups sugar into a saucepan. Cook over low heat, stirring until sugar dissolves. Bring to a boil. Cook for 20-25 minutes or until mixture thickens. Put in sterilised jars; seal, cool and stand for a few days before use.

Frozen Kiwifruit & Spinach Ice Cubes

Peel kiwifruit. Cut out stalk with a paring knife or spoon, and cut into chunks. Place fruit in a food processor and pulp quickly so the mixture is still a bit chunky. Spoon into ice cube trays. For the spinach, wash and remove stalks from leaves. Bring a pot of water to a boil and dip leaves in very quickly to wilt slightly. Remove and place in food processor; blitz until just pulped. Spoon into ice cube trays. Freeze overnight. Ideal for smoothies.

Kiwifruit Caprioska

Cut 4-6 kiwifruit berries and 2 limes into wedges. Place in a large glass jug with 2 teaspoons of brown sugar. Crush the fruit a little with a wooden spoon or muddler. Add 4-5 nips of vodka and muddle a little more. Add ice cubes and enough soda water to fill the jug. Pour into glasses lined with washed mint leaves and ice. This cheery drink can also be shaken for smoother sipping. Serves 4.

Oven-dried Kiwifruit Crisps

Preheat oven to 140°C. Peel and cut kiwifruit in half and lay flesh side facing up in a single layer on a baking tray. Sprinkle a little caster sugar over the flesh of the fruit. Coconut sugar is a good substitute, if desired. Cook for 2-2½ hours, until most of the kiwifruit’s liquid is dry. Turn off oven and leave the pieces to dry until oven is completely cool. Store in an airtight container until you’re ready to enjoy on cereal or yoghurt.
