Stefano Manfredi's 'Pizzaperta' is set to open this weekend, offering a new wave of Italian street food favourites.

Australia’s “Godfather of Italian cuisine” and star of MiNDFOOD’s An Italian Christmas last year, Stefano Manfredi (of Balla and Bells at Killcare fame) and restaurateur Julie Manfredi Hughes are getting ready to open a new open-air pizzaria at The Star Sydney this week.

The menu at Pizzaperta will feature a ‘new wave’ of Italian street food, including traditional pizza, Italian-inspired cocktails and wine.

Using artisan stoneground Molino Quaglia ‘Petra’ flours imported straight from the motherland (an Australian first), Manfredi will be introducing Australia to a new fermentation process that results in a more easily-digested dough.

Teaming with head chef Gianluca Donzelli, who has spent time at the two-Michelin-star Restaurant Don Alfonso near Sorrento, the pair have designed a menu with all the classics (margherita, marinara, hot calabrese) alongside new wave additions, imported salumi and desserts.

Pizzaperta is set to open at The Star this weekend.
