Simple vegetarian meal swaps the whole family can enjoy.

As we begin to understand the importance of sustainable and ethical eating, more and more people are looking to reduce their meat consumption. Even just swapping one meat-based meal for a vegetarian one can have a profound impact on the environment – but it can be hard to know where to start, especially if you’re cooking for a family.

Here are some easy vegetarian swaps you can try for your next ‘meatless Monday’:

Vegie Burger

The humble burger is an easy and delicious weekday dinner option – but next time, instead of going for the traditional meat patty, why not opt for a vegetarian option? From Portobello mushrooms to tofu to sweet potato patties, there are so many flavour possibilities available – the sky is the limit.

Lasagne

Everyone loves this hearty Italian classic, but you can put your own twist on it by swapping out the mince mixture for eggplant. Simply slice and roast the eggplant, then layer it between the pasta sheets. Smothered in sauce, you won’t even notice the missing meat.

Chilli Con Carne

Chilli is an extremely adaptable meal, and is perfect for a meat-free makeover. Swap the mince for protein-rich beans, then you can add whatever other vegetables you like – capsicum, sweet potato, mushrooms and carrot are all good options, and will help you reach your five serves a day.

Kebabs

You may be used to throwing your favourite chicken kebabs on the barbecue each summer, but vegetable kebabs offer a simple alternative that doesn’t sacrifice on flavour. Just thread your preferred vegetables onto sticks (you can use capsicum, tomato, zucchini and more) and grill until soft. You can also try using fruit, such as peaches, mango and strawberries, for a tasty dessert.
