In Istria they are dunked in Malvasia, the local wine, while still warm from the oven, before being dusted with icing sugar. This recipe from Paola Bacchia’s Istria cookbook sees the freshly baked biscuits brushed with a mix of white rum and grappa, or you can simply dust with icing sugar if you prefer.
