Chicken with Steph’s Spice from Ottolenghi’s New Cookbook COMFORT

Steph is Stephanie Kamener, a Jamaican chef Helen worked with many years ago in Melbourne. A lot of time has passed since the recipe for Steph’s roasted jerk-spiced meats was handed on – passed around the kitchen, scribbled down on a scrap of paper – but it’s been with Helen ever since. Recipes, like postcards, flying around the world with the scent of a place on one side, scribbled greetings on the other. Steph is still cooking her chicken in Melbourne, at her restaurant Mama Blu’s Kitchen.

Verena’s Potato Salad from Ottolenghi’s new cookbook COMFORT

Growing up in Germany, Verena remembers two camps when it came to potato salad: camp mayo and camp oil/broth. This is an oil/broth-based version, more prevalent in the southern parts of Germany, specifically Swabia and Bavaria. It’s less heavy and claggy than the mayo variety and gets its creaminess from the starch released by the potatoes as they sit for a couple of hours in the warm broth.

Persian Raisin Cookies

Raisins are an important ingredient in Persian cuisine, adding sweetness to yogurt, rice, and braised meat dishes. They also add sweetness to desserts and these cookies, which are as common in Iran as chocolate chip cookies are to Americans. Because of the added sugar in the cookies, the raisins here are added to the Persian Raisin Cookies more for their chewy, fruity flavor than to add sweetness—like in Romanian fursecuri cu stafide.

Dulce de Leche-Filled Butter Cookies

When you say the name of these cookies to most people, the Argentinian version is the one that comes to mind most commonly (although there are numerous country-specific iterations). Even within Argentina, these dulce de leche-filled cookie sandwiches can be found plain, rolled in coconut, coated in chocolate, or coated in meringue, like the Chilean chilenitos. The Spanish version from which this cookie takes its name is more like a candy or confection, made with almonds bound by honey and spices and coated in powdered (icing) sugar.

Almond and Sugar Cookie Bars

In Dutch, jan hagel refers to an unruly mob. Some people have interpreted that as a take on the cookie’s jumbled garnishes of sliced (flaked) almonds and crushed pearl sugar. Others have taken it to mean a term for the type of people who’d enjoy such a simple cookie since the term has also been documented as a slang term for sailors, common people, and others on the fringes of society. However the name came about, it is an appealing cookie.
