Raisins are an important ingredient in Persian cuisine, adding sweetness to yogurt, rice, and braised meat dishes. They also add sweetness to desserts and these cookies, which are as common in Iran as chocolate chip cookies are to Americans. Because of the added sugar in the cookies, the raisins here are added to the Persian Raisin Cookies more for their chewy, fruity flavor than to add sweetness—like in Romanian fursecuri cu stafide.

When you say the name of these cookies to most people, the Argentinian version is the one that comes to mind most commonly (although there are numerous country-specific iterations). Even within Argentina, these dulce de leche-filled cookie sandwiches can be found plain, rolled in coconut, coated in chocolate, or coated in meringue, like the Chilean chilenitos.
