Makes 1/4 cup
Ingredients:
- 1 tbsp each dried black, pink and white peppercorns
- ½ tsp sumac
- ½ tsp smoked paprika powder
- ½ tsp paprika powder
- 1 tbsp caster sugar
- 2 tbsp flaked salt
Method:
- Combine the pepper, sumac, paprika powders and sugar in a small spice grinder and grind until coarse.
- Add salt and mix to combine.
- Store in an airtight container.

- Use on any meat as a marinade – sprinkle over meat, rub with oil and set aside to marinate for 15 minutes.
