Ingredients:
- 1 tbsp olive oil
- 1 onion, finely sliced
- 4 garlic cloves, crushed
- 2 tbsp thyme leaves
- 2 x 400g cans chopped tomatoes
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 2 tbsp worcestershire sauce
- 500g bacon bones
- 3 cups chicken stock
- 2 cans butter beans, drained
- sourdough toast, to serve
- parmesan, grated, to serve
Smoky Baked Beans Method
- Heat oil in a large casserole. Add onion, garlic, and thyme. Cook for 5-7 minutes, or until onions are tender. Add tomatoes, brown sugar, paprika, worcestershire, bacon bones, and stock and bring to the boil. Reduce to a slow simmer, cover, and cook for 80 minutes, or until sauce thickens and bacon is tender.
- Add beans and season with salt and pepper. Cook for another 10 minutes. Sprinkle with parmesan and serve with hot buttered sourdough toast.
