Smoky Baked Beans
Treat your loved ones to a special breakfast this weekend, like these delicious smoky baked beans. Serve with sourdough toast, a piping hot cup of coffee.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 4 garlic cloves, crushed
  • 2 tbsp thyme leaves
  • 2 x 400g cans chopped tomatoes
  • 1 tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tbsp worcestershire sauce
  • 500g bacon bones
  • 3 cups chicken stock
  • 2 cans butter beans, drained
  • sourdough toast, to serve
  • parmesan, grated, to serve

Smoky Baked Beans Method

  1. Heat oil in a large casserole. Add onion, garlic, and thyme. Cook for 5-7 minutes, or until onions are tender. Add tomatoes, brown sugar, paprika, worcestershire, bacon bones, and stock and bring to the boil. Reduce to a slow simmer, cover, and cook for 80 minutes, or until sauce thickens and bacon is tender.
  2. Add beans and season with salt and pepper. Cook for another 10 minutes. Sprinkle with parmesan and serve with hot buttered sourdough toast.
