It may look like a tomato, but along with mango, tamarillo provides the perfect complement to this healthy porridge recipe.
Serves 4
1 tbsp ghee
2 cups rice flakes
2 tbsp LSA (linseed, soy and almond meal)
1 tsp vanilla extract
2 cups organic milk
1 mango, chopped
2 tamarillos, peeled, chopped
2 tbsp organic maple syrup
1 Heat ghee in a saucepan over a medium heat. Add rice flakes and cook until golden (toasting the flakes gives the dish flavour and makes the rice more easily digestible).
2 Add LSA, vanilla, milk and 2 cups of water. Cook, stirring constantly, until the porridge boils and thickens. Reduce heat to low and simmer for 10 minutes or until soft.
3 Serve rice flake porridge topped with mango, tamarillo and maple syrup.
