Non-Alcoholic Fruity Peach Iced Tea

Non-Alcoholic Fruity Peach Iced Tea. Make the most of delicious in-season stone fruit with this thirst quenching iced tea. 

Makes 1.5L

1 cup caster sugar

1 vanilla bean, seeds scraped

3 tsp loose-leaf green tea (or use 3 tea bags)

1.5L boiling water

Ice cubes

2 peaches, sliced

2 nectarines, sliced

Handful of fresh cherries

 

Place the sugar, vanilla bean and 1 cup water in a medium saucepan. Bring to a boil over medium heat, then reduce the heat to low and allow to simmer for 5 minutes, or until reduced. Take off the heat, allow to cool.

Place the tea leaves or bags into a heatproof jug, pour over the 1.5L boiling water and allow to steep for 10 minutes. Strain the liquid, discard the tea leaves or bags, then place the tea into the fridge to chill.

Combine the vanilla syrup with the tea and sweeten to your taste. Serve in a jug with plenty of ice, and the slices of peach, nectarine and cherries.

 

Smart Tip

If you like, you can give this iced tea a kick with a little vodka, rum, or your favourite fruity liqueur. You could also half fill a glass with the iced tea, then top up the rest with sparkling wine for a bright and bubbly cocktail.
