Warm Middle Eastern Lamb, Rice & Chia Salad With Feta Dressing. This Middle Eastern-inspired lamb salad is a delicious way to enjoy new easy-to-prepare nutritious SunRice Steamed Rice, with the added benefits of the super grain, chia.
Serves 2-4
250g packet of SunRice Steamed Rice & Chia
300g boneless lamb fillets
1 small red onion, thinly sliced
1 tbsp white wine vinegar
1 tbsp olive oil
1 bunch asparagus, trimmed,
cut into 3cm pieces
8 cherry tomatoes, halved
1 head beetroot, cooked
¼ cup walnuts, toasted
1 cup mint leaves
100g feta cheese
2 tbsp lemon juice
1 small garlic clove, crushed
lemon wedges, to serve
Heat SunRice Steamed Rice & Chia according to the instructions on the packet.
Heat a non-stick frying pan over a medium-high heat. Season lamb with salt and freshly ground black pepper.
Add lamb and cook for 3 minutes on each side for medium rare, or until cooked to your liking. Transfer to a chopping board. Stand for 10 minutes before thinly slicing diagonally.
Place onion in a ceramic bowl with white wine vinegar. Bring a saucepan of water to the boil. Add asparagus and cook for 1 minute or until just tender. Drain.
Add olive oil to onions, add the warm rice and chia, asparagus, tomatoes, beetroot, walnuts and mint. Season gently and toss to combine.
Add lamb to salad. Combine feta, lemon juice and garlic in a bowl and drizzle over the salad. Serve with lemon wedges.
