Thai Ginger Soup

Thai Ginger Soup recipe, brought to you by MiNDFOOD and Vitamix.

Thai Ginger Soup

A hearty soup guaranteed to warm up your body and soul.

1 slice of red capsicum

½ a stick of celery

2 shallots

¼ of an Apple

2 handfuls of cashews

2 cups of hot water

¼ clove garlic

1 small handful of coriander

1 slice of cheese (optional)

1 medium carrot

1 slice of yellow squash

1 slice of lemon with peel

1 small handful of cabbage

1 finger tip of fresh ginger root

1 vegetable stock cube

1 small slice of red chili


1 Start the machine on low speed, walk to high speed and run for approximately 1 minute.  


2 Chop on variable speed 4 or 5 for about 10 seconds

Optional:  Stop the machine and add a small handful of cabbage (cooked chicken or noodles would be nice also)

    I have never liked ginger but i know its really good for you. I love all the other ingredients so i might give this one a go, thanks.
