Honey & Soy Scroggin’ Mix

Honey & Soy Scroggin’ Mix. A good scroggin should be nutritious first and foremost, so including seeds, protein packed nuts and even a bit of energy from chocolate, dried fruit or natural honey. 

 

To toast nuts the trick is don’t walk away from the oven or stove top. The oils in nuts caramelize quickly on high heat, so find a good temperature in the oven that is not too hot and not too tepid either. Once nuts are toasted the nut takes on such a different flavor. Different size nuts can toast quicker than large ones, so watch and pull individual nuts out to preserve each and every single nut.

A good scroggin should be nutritious first and foremost, so including seeds, protein packed nuts and even a bit of energy from chocolate, dried fruit or natural honey. Mix the flavours up so it doesn’t have to be ‘raw’ and a little spice . Make it a pick and mix of flavours that you and yours love.

 

Makes 1 kg.

200g raw almonds

70g brazil nuts

200g raw cashews

70g pistachios

¼ cup sesame seeds

1 teaspoon freshly ground black pepper

¼ cup raw honey

¼ cup tamari soy sauce

100g dried cranberries

1/3 cup Pumpkin seeds

½ cup Sunflower seeds

½ cup Banana chips

100g Dried peaches, sliced

 

Preheat the oven to 180°C. Spread the almonds, brazil nuts, cashews and pistachios over a tray lined with baking paper. Mix together the sesame seeds, raw honey, black pepper, and tamari in a small bowl. Drizzle over the nuts and toss well to combine. Place the tray in the oven and toast the nuts for 7 minutes, remove and turn over with a fork. Place back in the oven for another 5 minutes. Watch, as they can burn easily if the oven is too hot.

Remove from oven when golden brown, and as the honey just starts to bubble. Turn with a fork, and place nuts on another piece of baking paper spread out on a board. Separate the pieces with a fork, and allow to cool.

Once cooled, place the nuts in a large bowl. Add the dried fruit, seeds and banana chips. Toss together well. The honey will be sticky so the other bits will stick easily. Divide the mix between small brown paper bags, sealed jars or boxes. If kept airtight will keeps well for 1 month.
