Mini Christmas Puddings

Alison May sent this great recipe 
for mini Christmas puddings. We love how it’s a recipe the kids can make 
– the non-alcoholic version, of course.

Makes about 24

½ x 20cm square purchased fruit cake

1/3 cup orange juice (or brandy)

1 egg white

½ to ¾ cup pure icing sugar, sifted

red and green snakes, chopped

1 Cut cake into 3cm squares. Form squares into balls and put on a large plate or tray. Sprinkle with orange juice. Cover with plastic wrap and refrigerate. (If cake 
is a little dry, break it up into crumbs in 
a large bowl. Add orange juice to crumbs until mixture is easy to form into balls.)

2 Using an electric hand-beater, beat egg white for 1 minute or until frothy. Add 1 tbsp icing sugar to egg white, beating continually. Continue to add icing sugar, 1 tbsp at a time, beating until a thick, shiny white icing forms.

3 Spoon icing onto each ball, allowing to drizzle down the sides. Decorate with pieces of red and green snakes. Cover and refrigerate until ready to serve.
