Fillet of Beef with Pepper Rub and Garlic Bread

Fillet of Beef with Pepper Rub and Garlic Bread. Keep it simple with the classic flavours of our Fillet of Beef with Pepper Rub and Garlic Bread. 

Serves 4-6

1 1⁄2 tsp coarse sea salt

1 tbsp peppercorn medley

2 tsp dried rosemary

1 tsp dried thyme

2 tsp raw sugar

1⁄2 tbsp garlic granules

1⁄2 tsp ground cinnamon

1.5kg beef fillet (centre cut)

2 garlic cloves, crushed

10 tbsp olive oil

1 baguette, sliced

 

To make pepper rub, use a mortar and pestle to finely grind salt, peppercorns, rosemary, thyme and sugar. Mix through garlic granules and cinnamon. Tie beef with kitchen string to keep in shape during cooking. Coat with pepper rub, then set aside at room temperature for 30 minutes to infuse.

Meanwhile, preheat barbecue grill plate to medium. Mix crushed garlic with 8 tablespoons of the oil in a small bowl. Arrange baguette slices on a baking tray. Drizzle with garlic oil and season with salt. Lightly brush beef with remaining oil and place on grill plate. With lid down, cook, turning every 7-8 minutes, for about 30 minutes for medium-rare, or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 10-15 minutes to rest.

Meanwhile, place garlic bread slices on grill and cook until golden brown on both sides. Slice beef and serve with garlic bread.
