Crispy Brown Rice and Fruit Slice Recipe

Forget about store bought muesli bars. Try this easy Crispy Brown Rice and Fruit Slice using what you have in the pantry, perfect for afternoon tea.

Makes 24 pieces

Ingredients:

3 cups puffed brown rice
1 cup puffed quinoa
¼ cup white chia seeds
1 cup desiccated coconut
⅓ cup dried blueberries
½ cup dried mango, chopped
⅓ cup craisins
⅓ cup sunflower seeds
⅓ cup pepitas
½ cup honey
⅔ cup rice malt syrup
⅓ cup coconut oil
75g dark chocolate, melted

Method:

Grease and line a 20 x 30cm slice tin with baking paper, allowing sides to overhang by 5cm.

Combine the puffed brown rice, puffed quinoa, chia seeds, coconut, blueberries, mango, craisins, sunflower seeds and pepitas in a large bowl.

Heat the honey, syrup and coconut oil in a small saucepan over a medium heat. Bring to the boil. Pour mixture in the bowl with the puffed brown rice and stir well to combine.

Press mixture firmly into prepared pan. Flatten top. Cover and refrigerate for 1 hour, or until set.

Cut slice into 5cm squares. Arrange on a wire rack over a baking tray. Spoon chocolate into a small piping bag. Snip the end. Drizzle chocolate over slice. Refrigerate until firm. Serve chilled.
