Chunky Wholesome Rocky Road

Vegan-friendly rocky road packed full of fruit, nuts, grains and coconut.

This chunky rocky road is packed with the goodness of nuts, fruit, grains and coconut. As there are fresh fruits in this recipe, it’s best stored in the fridge and should be eaten within a few days.

Chunky Wholesome Rocky Road Recipe

Serves 8–10, GF

Ingredients:

170 g vegan dark chocolate, chopped

1/2 cup puffed rice

1/4 cup shelled unsalted pistachios

1/4 cup cashews, pre-soaked

1/2 cup shredded coconut

1/4 cup dried cranberries

5–6 cherries

1/2 cup fresh berries (blueberries and/or raspberries)

Method:

Line the base and sides of a 30 cm x 20 cm lamington or brownie tin with baking paper.

Melt the chocolate in a heatproof bowl over a saucepan of simmering water.

Combine the puffed rice, nuts, coconut and cranberries in a mixing bowl. Pour in the melted chocolate, reserving 2 tablespoons, and stir well with a metal spoon (so the chocolate doesn’t seize). Transfer the mixture to the prepared tin. Top with the cherries and berries and drizzle over the remaining chocolate. Place in the fridge to set for 1 hour.

SMART Tip:

When buying dark chocolate, always read the ingredients list. Avoid those that include milk solids, milk powder or whey in the list.
