Char-Grilled King Prawns with Lemon

Char-Grilled King Prawns with Lemon. The ultimate BBQ starter for the summer season!

 

Serves: 5

Prep Time: 15-20 mins (allow at least 2 hours for marinating prawns)

Cooking Time: 4 min

 

Ingredients

10pcs whole green prawns U8

2 lemons

 

Marinade Ingredients

Half a bunch of oregano

30g long red chilli

30g garlic cloves (peeled)

200ml olive oil

 
Using a sharp serrated knife, cut the prawn open lengthways from the head to just above the tail ¾ of the way through the prawn and shell. Prawns must be cut whilst remaining in their shells.

Next, gently wash the heads clean and place aside ready to be marinated.

For the marinade, de-seed the long red chillies and roughly chop, add to a small blender with the peeled garlic and picked oregano leaves. Gently pulse the blender. Be careful not to over blend into a paste. It needs to be slightly course for the high-heat grilling otherwise it will burn before the prawns are cooked.

Next place the blended ingredients in a bowl and add the olive oil.  The ingredients can also be hand cut by knife if a blender isn’t available.

Marinate prawns in the mixture making sure to get plenty of marinade onto the flesh side of the prawns. Please allow at least two hours of marinating.

For cooking pre heat your BBQ or grill on the highest setting. Season the prawns with sea salt & cracked pepper & grill flesh side down for approximately 3 mins & then 1 minute on the shell side.

While grilling the prawns grill ½ lemons on the flesh side for presentation & squeeze over prawns for serving.

Recipe makes five entrée portions.
