Serves 4
1 Silver Fern Farms Beef Stir-Fry
2 tsp smoked paprika
1-2 tbsp dukkah
1 brown or white onion, halved, thinly sliced
olive oil
1 clove garlic
handful of white button mushrooms, sliced
300ml cream
1 tsp wholegrain mustard
1 lemon, zest only
1-2 tbsp sour cream
4-6 cornichons, sliced, plus extra to serve
crusty rolls, to serve
rocket, to serve
Coat the beef in the paprika and dukkah and leave for at least 30 minutes – the longer the better.
Quickly cook the meat in a hot pan and remove when just browned. In the same pan, add some oil and saute onions for 2 minutes, then add garlic and mushrooms and cook for another couple of minutes.
Return meat to pan, add cream, mustard, lemon zest, sour cream, cornichons and salt and freshly ground black pepper to taste.
Serve in crusty rolls with rocket, if desired.
