“I’m using Australian Onions to make the most incredible burger! It has beer battered onion rings, a sticky and sweet bacon and onion jam, a homemade beef patty filled with spices and onion, and a delicious sauce. This is such a great mid week meal where a lot of the elements can be made ahead of time and kept in the fridge until you’re ready to make your burger. The jam will keep for a week and the patties can be frozen. If you’re feeling a little bit extra, make my big mac sauce and onion rings to turn your burger from great to incredible. Some alternatives you may wish to consider: you can replace beer with a zero-beer option and you can buy store-bought beef patties for convenience,” says cookbook author and influencer Daen Lia.

“I could not think of a better dinner that can be eaten straight out of the pan and on the couch than this caramelised onion sheet pan pizza. I have used onions to make the best caramelised onion topping. The trick to making them is to go slow and cook low. While I have used my homemade no knead focaccia dough, you can easily use store bought pizza base and make the caramelised onions in advance, to make it a little less time consuming on those busy nights,” says cookbook author and influencer Daen Lia.

Bulbs of fresh garlic that have been cooked (and cured) at very low temperature for up to a month are called ‘black garlic’. These soft, deep black cloves have no resemblance in flavour to raw garlic, but taste like a mixture of balsamic vinegar, miso and molasses. It’s a flavour that pairs beautifully with chicken and porcini mushroom in this super easy to make tray bake dish.

It was a little moment of revelation, I remember, when I first combined roasted cauliflower and raw grated cauliflower in the same dish. So different from one another, but working so well combined. This is lovely as it is, served as part of a spread, or spooned alongside some roast chicken or lamb. Don’t throw away the leaves of the cauliflower here. They’re lovely to eat, roasted and crisp, or grated raw as you would the rest of the cauliflower. If you want to get ahead, roast the cauliflower up to 4–6 hours in advance. Keep at room temperature and then just combine with the remaining ingredients when ready to serve.
