You can bake a cake and eat it

Finding the time to bake a cake is not easy, but you'll get enormous pleasure from doing it, writes MiNDFOOD food editor Dixie Elliott.

Love baking! Whether it is a batch of scones, a tray of biscuit or a cake I really enjoy the whole process.

I think I am very lucky with the baking genes I inherited, as I am from a family of great bakers. My great-grandfather owned a bakery in Mornington, Dunedin and was famous for his treats.

My Mum is one of five sisters, all of whom are wonderful cooks and bakers.

I can remember my Nanna telling me stories about how every Saturday she would wake early, head into the kitchen, then bake and cook all morning.

At lunchtime the girls would all walk in, back from tennis or piano with friends and boyfriends in tow, and by 4pm not a crumb would be left.

With most Mums and Dads working these days, it’s near impossible to keep the art of baking alive.

The supermarkets are full of “convenience” goods in the form of cake and icing mixes to help us in the baking process.

Although there are some excellent products, to make a cake from scratch really does improve the flavour and it is more economical.

If you should find a small amount of time on the weekend, spoil yourself and bake a cake – not only will you find it enjoyable but also your nearest and dearest will love you for it.

When the cake is cool enough to eat, cut yourself a slice, make a nice cup of tea, put your feet up and read your latest copy of MiNDFOOD. The world won’t end if you take half an hour off.
