Sydney chef's food empire is crumbling - and he's thrilled about it

Sydney has a BYO with a difference – a dessert restaurant where customers pretty much ‘bake their own’ crumble.

Luke Stack is the founder and owner of Crumble Top in the busy restaurant precinct of King St, Newtown.

Stack has worked in kitchens across the world including Paris, Sardinia, Dubai and as Gordon Ramsay’s sous-chef in London for years.

Stack developed Crumble Top after buying fresh rhubarb from his local farmers market and making a delicious crumble. He spent two years planning the concept before opening his first store.

Customers select the filling, choose the topping and pick sides such as ice cream, sauce or which are then baked to order in an individual tray. Flavours are based on seasonal fruits, berries and fresh ingredients.

Crumble Top has partnered with Uber Eats and Deliveroo for home deliveries and Stack is looking to franchising the concept across Sydney and other states.
