What the Winemakers are Drinking
Jeff Fyfe, senior winemaker at Yealands Estate, shares his Christmas wine list.

What are your thoughts on wine and food pairing? Is it really essential?

For me it’s all about personal preference. Sure, there are some great wine and food matches that really complement each other, but everyone likes different things, so if you like it, drink it.

What wine are you most looking forward to this season?

We have just released our 2016 Single Vineyard Sauvignon Blanc, so I am looking forward to enjoying a few bottles of this over the Christmas holidays.

What wine will you have with Christmas lunch and what’s on the menu?

Billecart-Salmon Champagne Rosé for breakfast and Austrian riesling for lunch. We have a big family so lunch will be turkey, ham, crayfish, whitebait, new potatoes and asparagus from Dad’s garden.

What wines and food would you prefer 
if you had to make a choice?

Sauvignon blanc is great as it can go with all white meats and seafood and is refreshing on a hot Christmas Day. For red meats I would go with a lighter bodied red such as pinot noir; if I make it to the Christmas pudding I will be reaching for a nice port and dessert wine.

What do you enjoy most about the Christmas holidays?

Watching the kids open their presents 
and spending time with the family.
