The Christmas holiday period is almost at an end, and it won’t be long before we’re all daydreaming about where to travel next. We asked the team here at MiNDFOOD where they would like to go in 2020, and the answers were surprisingly diverse.

Rajasthan. I love India – the people, the food, the culture – but I’m yet to visit the North. A tour of this region is on my bucket list, with overnight stays at historic palaces, visits to local villages as well as the fabled cities of Agra, Udaipur, Jodhpur and Jaipur. And shopping, lots of shopping.

I hope 2020 is the year I hope to trace some family history on the Isle of Man. Apart from working on the family tree, I’d explore the history of the island and explore some of its natural attractions. While in the vicinity I would pop over to the Channel Islands to visit Jersey Zoo – established by the marvellous Gerald Durrell – and maybe even visit the rugged Shetland Islands, with its grand isolation, wild scenery and spectacular birdlife.

Next up on my bucket list is Copenhagen, Denmark. I’ve been getting really into Scandi TV shows this year and have become a bit obsessed with the Scandinavian countries. The brightly coloured houses look gorgeous and I would go in winter, to catch both the snow and the Christmas markets. I’d also pack my ice-skates for a spot of outdoor skating…magical!

I’ve always wanted to visit Antarctica, and now with the expedition cruises leaving from Australia and New Zealand I feel 2020 could be my year! I would love to see the penguins and seals, and I think the underwater submersibles (on board a ship like Scenic Eclipse) would be absolutely incredible!

My dream destination for 2020 is Budapest. I’d love to spend a week or two in Budapest relaxing in the ancient thermal baths, exploring the city, visiting iconic architecture and spending warm evenings overlooking the city on rooftop bars and restaurants.

In 2020 I would love to experience a White Christmas. The kids want to build proper snowmen and I’d love to learn how to ski. Sitting around the fire drinking a hot chocolate after an exhausting day in the snow sounds perfect. Hubby has been to Canada a few times and is keen for us to visit as a family. Christmas in Canada, somewhere like Sun Peaks, sounds perfect.

I’m a hiker. So any long walks are on my bucket list. But specifically Everest Base Camp, Machu Picchu (the long way) and Pacific Crest Trail along the west coast of the USA.
