Top pastry chef opens shop in Sydney’s eastern suburbs
Yves Scherrer is known for his amazing desserts at some of the world’s best restaurants – but now Sydneysiders can forgo the fuss of fine dining to try his beautifully-crafted sweet creations.

The award-winning pastry chef and his partner Jennifer have opened Madame & Yves, a patisserie and bakery in Clovelly.

The store features a delicious array of sweet treats including Scherrer’s mouth-watering salted caramel chocolate eclairs, chocolate croissants that are arguably the best in Sydney, and gelato made from scratch.

Playing on the story of Adam and Eve, Madame & Yves aims to put love into all that is produced. Everything in the store is made fresh with no artificial colours, additives or compound flavours.

Love for the environment is also evident – the patisserie uses sustainably sourced ingredients, avoids single-use plastics by using biodegradable plant-based packaging, and has invested in the Green Caffeine coffee cup exchange system.

Madame & Yves is also partnering with Madding Crowd, a boutique small-batch local Sydney roaster and social enterprise which donates a portion of profits back to charitable organisations and delivers bespoke roasts in reusable tins.

As a pastry chef, Scherrer has an undeniably impressive resumé having created some of Sydney’s iconic desserts at restaurants including est. Restaurant, Sokyo, Ananas Brasserie and Saké.

Scherrer has also been a brand ambassador for French premium chocolate manufacturer Valhrona – a favourite of pastry chefs the world over.

He coached the Australian team for the World Pastry Cup last year. The team finished sixth in the world and won three awards.

In addition to some of Scherrer’s classic desserts, there are some new creations on offer at Madame & Yves.

The matcha yuzu roll is a unique and refreshing dessert made from a matcha sponge, mascarpone yuzu cream, yuzu whipped ganache and shiso leaf gel sitting on a base of choux pastry sponge.

The piña colada tart also features interesting flavour and texture combinations with its toasted white-sesame gelato and almond croissant filled with raspberry jelly.

Madame & Yves is open every day from 7am-5pm.
