Make sure your meat is cooked to perfection every time with these must-know tips for pan-frying red meat:

  1. Let meat come to room temperature before you start cooking it to ensure even cooking
  2. Oil the meat rather than the pan so that the pan can heat without burning the oil and causing the meat to stick
  3. Don’t salt to soon as it can draw out the juices
  4. Season thoroughly just before cooking to enhance the natural flavour of the meat
  5. Cook on medium-high heat to sear the meat, seal in the juices and caramelise the outside
  6. Cook for 3-4 minutes on each side for medium rare
  7. Only turn your meat once and take care not to tear it and let the juice escape
  8. If using a meat thermometer, insert it into the centre of the meat. It should be 130-135 °F for medium rare. The temperature will continue to climb slightly once removed from the heat
  9. Once cooked, remove the meat from the heat, cover it with foil and let it rest for 5 minutes
  10. Slice across the grain to enhance the tenderness and eating experience.
