Vegan Rainbow Salad
Serves 4
3 garlic cloves, crushed
1 ½ tbsp chopped oregano leaves
2 x 400g cans black beans, rinsed and drained
½ yellow capsicum, diced
½ red capsicum, diced
½ green capsicum, diced
4 spring onions, cut into rings
½ cup coriander leaves
¼ cup olive oil
Juice of 1 lime
Salt
½ tsp chilli powder (optional)
¼ cup Ocean Spray® Light Cranberry Classic™
1 avocado, sliced lengthwise
½ cup Ocean Spray® 50% Less Sugar Craisins® Dried Cranberries
1. In a large bowl, combine all the ingredients except the avocado. Taste and adjust the seasoning until the flavours come together.
2. Cover and refrigerate the salad for a minimum of 2 hours to enhance the flavours.
3. To serve, add some sliced avocado, and garnish with coriander and a handful of Ocean Spray® 50% Less Sugar Craisins® Dried Cranberries.
