Christmas Entertaining Advice from Kate King

Christmas is always a busy time of year. Thanks to Gourmet Direct and Silver Fern Farms, entertaining just got easier. Kate King shares her tips and tricks for this holiday season.

Venison Cutlets with summer barley salad

One of the most exciting launches this year, is the new Venison Cutlets from Silver Fern Farms. Lean and tender, the cutlets are the first Silver Fern Farms retail product served on the bone, adding to the flavour of the meat. The new cut is a great addition to summer entertaining says Kate,  “They are so easy! Especially after the work and effort of Christmas, New Year’s needs to be quicker and easier so it’s a great product to use.” Her recommendation? Grill the cutlets and serve with a fresh salad, like this delicious recipe served with Barley Salad and Pomegranate Dressing. 

Kate shared her predictions for Christmas entertaining with MiNDFOOD, as well as letting us in on what she will be serving this Christmas.

What kind of Christmas do you think people are planning this year?

Listening to our customers and given the Covid confinements, including the positives that people are taking from it, there are going to be some huge family Christmas’s happening around the country this year. This is great news for New Zealand farmers who produce a great product.

What will you be serving this Christmas?

Like a lot of other people, we’ll be having quite a large family Christmas this year. This year I’m serving a few Silver Fern Farms beautiful New Zealand grass fed whole Beef Eye Fillets wrapped in bacon with a bit of garlic butter and lots of pepper, béarnaise sauce and our favourite family grotty potatoes (potato gratin) with lots of fresh and interesting salads. We’ll also do a couple of Lamb French Racks especially for Grandad who’s 92 but loves his lamb lollipops.

What do you think Kiwis will be enjoying this Christmas? 

I think that the whole Christmas and New Year period will be one of family feasting and I think this will happen in a truly Kiwi way. There will potentially be less turkey, Kiwis can never get away from a good ham, but I think people will treat themselves and their loved ones to premium beef and lamb this Christmas. That is the way our sales are trending currently. It’s looking like they’re going for whole Eye Fillets, Lamb French Racks, whole Scotch Fillets for the barbeque or steaks if there are less dinner guests. But Kiwi’s want to reward themselves this Christmas and to take advantage of the fact that they’ve got family home and once Covid restrictions lift may head back overseas.
