Jamie Oliver to put US on diet

Celebrity chef Matt Moran's perfect food and music match is an Aussie beef pie with a can of VB beer and Cold Chisel playing in the background, on MiNDFOOD.

Jamie Oliver to put US on diet

Matt Moran, along with a slew of other celebrity chefs, including Gordan Ramsay, will feature at the Good Food and Wine Show, touring around Australia over the coming months.

The owner of Aria Restaurant in Sydney, Moran is no stranger to the limelight, having appeared in numerous cooking and lifestyle TV shows, including The Chopping Block, MasterChef and Heat in the Kitchen.

He speaks to MiNDFOOD ahead of the Sydney, Brisbane and Perth installments of the festival, where he will take part in Celebrity Theatre Demonstrations.

How do you plan to wow audiences at the Good Food and Wine Show?

Hopefully with some tips on how to cook some really good food. They should go away with some new knowledge and have some fun whilst they learn.

What is your signature dish for this season?

Winter vegetable salad and fresh shaved truffles. I am loving the Australian truffles at the moment.

What ingredients are you loving right now?

Western Australian truffles and Wagyu short rib.

What’s harder: cooking for fussy eaters or appearing on television?

Definitely fussy eaters as you only get one take for them!

What is the trait you most deplore in other cooks?

It has to be chefs who are not passionate about what they do and as a result use poor quality produce or processed foods.

What is the trait you most deplore in yourself as a chef?

Sometimes your strengths are your weaknesses. I am passionate about high quality produce and I can be very particular about what I use. Some people may say I am a perfectionist others may call it anal.

Do you think it’s acceptable to be arrogant in the kitchen?

No it’s not, to be honest its not acceptable to be arrogant at anytime.

Outside of the kitchen, which talent would you most like to possess?

My son is currently learning how to play the guitar and I would love to be able to teach him.

What is your perfect food and music match?

A good Aussie pie, VB and Cold Chisel.

What is your favourite food-themed movie?

Ratatouille and my kids love it too.

Which living person would you love to make a meal for? What would it be?

I would love to cook for Tiger Woods. I would serve a nice hot Thai curry and wash it down with a nice cold beer.

What do you consider the most overrated ingredient or cooking technique?

Baby corn as I find it flavourless.

What is your greatest extravagance in the kitchen?

Truffles and caviar.

What do you consider your greatest achievement?

I am hoping it’s still to come.

What is your greatest regret when it comes to your career?

I don’t really have any regrets, I like to call them experiences.

What is your current state of mind?

Busy, confused and excited.
