Since it was founded in 2014 by young entrepreneur Will Edwards, Archie Rose has gone from strength to strength to become Australia’s most-awarded distillery.

While they’ve recently opened an innovative new distillery in Sydney’s Banksmeadow, the original site in Rosebery makes for a fantastic destination for lovers of spirits, thanks to the range of experiences on offer such as distillery tours and gin, whisky and cocktail masterclasses.

Harriet Leigh, head of hospitality at Archie Rose, talks to MiNDFOOD about the new distillery and what’s in the pipeline.

What prompted the decision to construct the new Banksmeadow distillery?

Quite simply it was volume – at the original Rosebery site we were just limited by how much we could produce. This is proven by the fact that currently we can’t keep up with demand for whisky. Because it’s an aged product we have to wait for the spirit to mature so we’re currently selling whisky that was produced at Rosebery three years ago. It’ll be another couple of years before the spirit from Banksmeadow comes online, by then we’ll have enough spirit to satisfy demand globally. 

How does the new facility improve upon the Rosebery distillery?

It is a completely different beast. There is so much flexibility in the new distillery – from the design of the whisky stills and the tech behind them to the size and variability of the hybrid vacuum gin still. We’ve also got state of the art mashing capabilities. It’s all pretty nerdy stuff. For the office staff having space is pretty revolutionary – we all used to squeeze into one room we called the bunker at the old HQ – now we’ve got meeting rooms! A coffee machine! It’s like we’re living in the future.

Are there any plans for new experiences at Archie Rose in the pipeline?

We’re constantly evolving our experiences, we have around 10 on offer at any given time, but we also do one-offs and limited experiences when we launch new limited products. We’ve got some really exciting ones in the pipeline. 

What is the most popular experience you offer?

By far the gin blending experience. It is a pretty cool experience – we guide you through a number of different distillates and assist you in making two of your very own blends which you can take home with you after the class. You learn so much about gin, but also about flavour. It’s great for home cooks or gin fans.
