The ‘wild dining’ experience sees Talisker’s Boasthouse transformed into a unique pop-up restaurant. Situated on the rugged cliffs of North Head, New South Wales, the ‘Taste of Talisker’ experience offers guests a rare chance to sample a sustainably sourced seafood menu inspired by the flavours of Talisker.
Guests have the chance to book two experiences. First, on the 21 October, a dining adventure hosted by Niland himself, which features a three-course paired menu. For a more relaxed bar experience, the Taste of Talisker two-hour guided whisky experience can be booked between 12pm – 9pm on 22 October, taking guests on a sampling journey of the Talisker range, while enjoying bar snacks from Niland’s Saint Peter restaurant.
Niland, who has carved out a reputation as a sustainably-driven chef with a focus on ethically-sourced seafood, says the collaboration with Talisker presents an exciting opportunity for a whisky and cuisine exploration.
“I wanted to capture the wild spirit of the sea paired with key aromas of Talisker – smoke, spice and a sense of sea salt spray in the morning after a storm,” he says. “Years of maturation made by the sea has lent a full flavour to this bold dram and this menu celebrates Talisker’s rich flavours while honouring the sea in a sustainable and ethical way.”
