Roots Restaurant connecting with nature

Watch Guilio Sturla foraging for his restaurant and explaining the sustainable philosophies around Roots approach to dining.

Guilio Sturla is the chef and founder of award-winning Lyttleton restaurant Roots which has turned the traditional restaurant model on its head. There is no set menu. Instead customers are served what has been foraged or sourced that day from within 100km radius of the restaurant. It’s about respecting produce and producers, and taking inspiration from nature, says Sturla.
