Whisky Collins
This riff on a Tom Collins requires Japanese whisky, which is known for being exceptionally balanced and smooth. You could also use your favourite Scotch whisky as a good substitute.

Serves 8

 

⅓ cup sugar

2 cups Japanese whisky (suchas Nikka or Suntory)

1 cup fresh lemon juice 

1 x 340g can club soda

lemon twists, to serve (optional)

 

Combine sugar and ⅓ cup water in a jar. Cover; shake until sugar dissolves.

Combine with whisky, lemon juice, and club soda
in a large pitcher. Add 8 cups ice; stir until ice begins to melt, about 1 minute.

Serve over ice, garnished with lemon twists, if desired.
