Walnut Shortbread

Walnut Shortbread
A beautiful, buttery walnut biscuit that is so simple to create, you'll find it becomes a regular in your baking repertoire.

Makes 25-30

170g unsalted butter

125g icing sugar

1 tsp vanilla extract

180g plain flour

75g corn flour

1/2 tsp salt

130g walnuts, ground

Quince jam (optional)

Preheat oven to 160oC.

Cream butter and icing sugar until smooth. Add vanilla, flour, corn flour and salt. Mix well until all ingredients are well combined.

Mix in the ground walnut and let the mix rest for about half an hour. Roll up the mix in small balls and place them at least 5cm apart from each other on a baking tray. If adding quince jam, make an indent with back of a teaspoon in each biscuit and add a dollop of the jam. Bake for about 12-15 minutes.

Cool and serve.
