Tomato Rice

Just in time for the India Australia Friendship Fair, Indianlink offers up a delicious recipe for Curried Leather jacket.

2 cups basmati or any long-grained rice

½ cup peas

2 tbsp olive oil

1 sprig curry leaves

½ tsp mustard seeds

½ tsp urad dal

½ tsp chana dal

1 bay leaf

1-inch stick cinnamon

2 medium onions, sliced lengthwise

2 tsp grated ginger

1 tap crushed garlic

3 medium tomatoes, diced

1 cup tinned diced tomatoes

10 numbers cashew nuts

½ tsp turmeric powder

2 tbsp sambhar powder (or to taste)

1/2 bunch coriander leaves

Salt to taste

Pinch sugar

1 tbsp tamarind paste

1 Cook rice and set aside to cool. Make sure each grain of rice is separate.

2 Heat oil in a heavy-bottomed pan and add mustard seeds, dals, bay leaf and cinnamon stick. When they start to splutter, add curry leaves and onions, garlic and ginger. Cook till onions are pink.

3 Add fresh diced tomatoes and cook till they are broken down somewhat, then add tinned tomatoes and finish off. Then put in the salt, turmeric and sambhar powder, and add peas and cashew nuts. Mix well and cook till peas are done.

4 Then add sugar and tamarind paste. When combined, add in the chopped coriander leaves. Mix. It should all have a thick paste-like appearance. Now introduce the rice in batches, and mix gently to combine. Cover and cook for a further minute or two, and turn off heat. Keep covered for a while before serving.

5 Best served with pappadums, plain yoghurt and an accompanying green salad.
