Simple Summer Pasta

In need of easy and fresh dish you can whip up in minutes? Look no further than this simple summer pasta recipe.

Serves 4

400g spaghettini

6 ripe tomatoes, finely chopped

2 cups watercress sprigs

2 garlic cloves, finely chopped

¼ cup olive oil

1 lemon, finely shredded rind and ¼ cup juice

1 bunch chives, finely chopped (you will need approx ¼ cup)

½ cup basil leaves, roughly chopped

½ cup mint leaves, roughly chopped

Grated parmesan, to serve

1 Cook pasta in a large saucepan of boiling, salted water until just tender, as per packet instructions. Drain and return to saucepan.

2 Add tomatoes, watercress, garlic, oil, lemon rind, lemon juice, chives, basil and mint. Toss until well combined. Serve warm or cold.

3 Add parmesan to taste.
