Roast Beef with Cranberry & 
Balsamic Glaze

This gorgeous roast beef recipe with cranberry sauce is the perfect accompaniment to any sunday roast. Using prime beef roast - there's nothing that can go wrong.

Roast Beef with Cranberry & 
Balsamic Glaze

Serves 3-4

1 pack of Silver Fern Farms Prime-Cut Beef Roast

2 tbsp rice bran oil

½ cup dried cranberries

½ cup red wine

¼ cup balsamic vinegar

Remove the roast from the fridge and allow to come to room temperature. Preheat oven to 200°C.

Rub beef roast with oil and season with salt and freshly ground black pepper.

Heat a large frying pan and sear roast on all sides until browned.

Transfer to a hot oven and bake for 20-25 minutes for medium-rare. Cover and leave to rest for 10 minutes.

Meanwhile, while the roast is cooking, soak cranberries in ½ cup boiling water for 10 minutes. Drain.

While the beef is resting, add red wine, balsamic vinegar and cranberries to the same frying pan used to sear the beef. Simmer until thick and syrupy, about 10 minutes. Season to taste.

Serve with mashed potatoes and roasted or steamed vegetables.
