Rekorderlig Beef Cheeks

Use cider to marinate beef cheeks until they are sweet, sticky, and so tender that they fall apart.

Rekorderlig Beef Cheeks

Serves 6

Ingredients

2 kg beef cheeks untrimmed 

100g butter

500g brown onions, sliced

10 cloves of garlic, chopped

40g tomato paste

2 bay leaves

1 tbsp thyme

1 bottle Rekorderlig Orange and Ginger Cider

1 tbsp salt

1L beef stock (you can use chicken if you like)

Seal the beef cheeks

Cook the onions and garlic in the butter to golden, add all other ingredients.

Put Cheeks into liquid, cook on low heat with lid on for 3-4 hour until tender.

Strain liquid and use as sauce, serve cheeks with sauce, on a mash of swede and turnip with caramelised shallots and chopped parsley.
